Busy Season For Lemang Vendors
By Yusrin Junaidi
Bandar Seri
Begawan - Lemang vendors are a familiar sight along roadsides,
cooking sticks of lemang for the breaking of fast during the month of
Ramadhan.
A wide variety of lemang is available
inlcuding Lemang Temburong, Lemang Tutong and Lemang Than Pulut.
Lemang
is made from glutinous rice (Beras Pulut) that is cooked with coconut
milk (santan) inside a piece of bamboo, usually over an open fire.
Making lemang is not easy and it
requires experience and patience.
Banana leaves are cut into strips and
rolled up to cover the entire inner surface of the bamboo, leaving the
centre empty for the glutinous rice. Uncooked and washed glutinous
rice is then poured in until it fills about half the bamboo. Next, a
mixture of coconut milk and water is added and the bamboo is placed
over an open fire to cook slowly. The bamboo sticks containing the
lemang mixture are normally supported by a wooden frame.
A young lemang vendor in Gadong,
Dayang Rohana binte Sidik, 15, said she started selling lemang on the
first day of Ramadhan, and expects to continue selling until the first
day of Hari Raya.
She added that lemang is best eaten
with ;Rendang Daging".
Also spotted along the same road was
a "Nasi Pandan" vendor Hjh Haslinda binte Hj Yahya, 72. Hjh Haslinda
said she sells her "Nasi Pandan" from 3pm till 5.30pm. Apart from that
she also sells Malay desserts such Kueh Kusui, Pais Ubi and Kueh
Lapis. -- Courtesy of
