Abattoir
Twenty five students from St Andrew's
School's Geography Club visited the Golden Chicks Abattoir in Mulaut
yesterday morning.
The educational trip aimed at gaining
knowledge on the processing side of the abattoir as well as the team
work done by the workers.
The students experienced first hand
the operational and processing done in the abattoir.
The manager, Awg Bohari Dasin, gave a
briefing on the history and operation of the plant including a
detailed talk on the Hazard Analysis Critical Control Point (HACCP)
programme critical to hygiene control of processing plants.
HACCP is the international standard
for food processing plants, especially in the poultry industry.
Bacteria count and temperature is
kept at a minimum, he said. Strict monitoring and constant supervision
is required to meet the HACCP standard. And Golden Chicks had
implemented 60% of the HACCP standard since 1999.
Awg Bohari and his assistant Ak
Zukarnaen led the students around the Golden Chicks plant. They saw
the steps of processing live chicken into fresh poultry meat products.
Mrs. Fatimah, the teacher, said the students have been visiting
various places in Brunei. This week, the Geography Club's topic is
Industry in Brunei, so she wanted the students to see how processing
plants operate and what factors affect the industry. She said the
visit also served as a general study, which students can apply in
examinations.
