Monk Fish Delights At Deals

Begawan - Deals Restaurant at Sheraton Utama hotel in the
capital is introducing four new signature dishes using the specially
imported `Monk' fish and prepared by Fine Dining Chef at the hotel,
Dian Indria.
The new dishes are "Garlic Spiked
Monk Fish Fillet" served with spinach pilaf, marinated mushrooms,
grilled fresh tomatoes, steamed asparagus and topped with lemon
cream and saffron sauce; `Baked Monk Fish Fillet" served with
Parmesan Mornnay, sauteed capsicum pasta, steamed mixed vegetables,
egg plant puree topped with garlic cream and Hollandaise sauce;
"Grilled Fillet of Monk Fish with Champagne Rub" served with
gratined potatoes, Provencal baked vegetables, enoki mushroom
fritters, tomatoes coulis and topped with champagne sauce; "Sauteed
Monk Fish Fillet in Sauce Coral" served with braised apple and
celery, chateau potato, roasted capsicum and topped with aioli
sauce.
According to Chef Dian, who has
worked for Sheraton Bandung Hotel & Towers in Bandung, Indonesia,
Monk fish is rich in vitamin B and is low in cholesterol and fat.
The dishes are priced at $40 with 10 per cent service charge.
Deals is also introducing a range
of new desserts including "Caramel Walnut Pie and Honey Ice Cream",
"Steamed Christmas Pudding and Cinnamon Ice Cream", "Hazelnut Nougat
Christmas Log and Mini Mince Tart" and "White Chocolate Mousse
